The liquor also may beprocessed into two components: cocoa solids andcocoa butter.Unsweetened baking chocolate contains primarily cocoa solids andcocoa butter in varying proportions. Much of the chocolate consumedtoday is in the form of sweet chocolate, a combination of cocoasolids, cocoa butter or other fat, and sugar. Milk chocolate issweet chocolate that additionally contains milk powder or condensedmilk. White chocolate contains cocoa butter, sugar, and milk, butno cocoa solids.
